Welcome to NourishWell: A Letter from the Editor

Evenings at my house are chaotic. My partner and I have two-year-old twins, and that window between preschool pickup and bedtime is often the most challenging part of the day. We both juggle demanding jobs while multitasking — cooking, remembering if the dog has been fed, and managing toddler diplomacy, just to name a few. And amid all this, we’re expected to eat healthily, exercise, get enough sleep, and practice self-care. Who has time for all that?

Right now, my biggest challenge with healthy eating is finding the time and energy to plan balanced meals for myself and our family. Thankfully, as the twins grow, we’re able to do it together more often than when they were babies (frankly, I barely remember what we ate those first two years). They enjoy grocery shopping and eating the foods they see us eating, and I’m excited to keep moving forward in that direction. But it’s far from easy. Toddler tastes change daily, and sometimes they refuse to eat altogether. Most evenings, I find myself with one or two kids perched on the counter or in my arms, spending time together and “helping” me cook dinner. This is our healthy eating reality. What’s yours?

My Healthy Eating Journey

I’m not a perfect example of healthy eating. I’ve improved over time, but growing up, I followed what I now recognize as a poorly planned vegetarian diet. I was vegetarian from childhood into my mid-twenties, mostly living on fruit, yogurt, cheese, bread, and pasta. My partner still jokes about my “milk-tarian” phase. What I didn’t realize then is that any diet—especially one that excludes certain foods—needs thoughtful planning and balance.

When I moved to Iceland in 2015, I began crafting more balanced meals incorporating a variety of food groups. I also started eating fish, which is fresh and abundant here. This was a life-changing choice for me, opening up new culinary experiences and a more flexible diet. This works for me as a mostly pescatarian, but it’s not necessarily the right approach for everyone. Healthy eating is a journey that evolves over time, and you hold the power to decide which foods and eating patterns make you feel your best.

The Challenge of Healthy Eating

We understand that healthy eating isn’t easy. It can be difficult to know where to start. There’s a lot of misinformation around nutrition, and healthy foods can sometimes be expensive or hard to find. Yet, for many people, it’s a top wellness goal. In a study by NourishWell Media, 72% of participants said that “eating healthy and nutritious foods” was their most important health or wellness goal. In another survey, two-thirds expressed interest in nutrition content, but only one-third rated their own eating habits as “very or extremely healthy.” That means most people want to eat well but struggle to do so.

So, what’s getting in the way? Change is tough, and life is busy. People need more than information—they need practical steps to start and ongoing support. Recommendations must be accessible and affordable. Community and connection are essential. Additionally, systemic biases and inequities impact food access and health outcomes. Nutrition advice too often reflects a narrow Western viewpoint, overlooking rich cultural food traditions. We have a responsibility to expand our definition of healthy eating and offer culturally relevant guidance to better support everyone’s health goals.
